Salamura yaprak is the Turkish name for grape vine leaves preserved in brine, and Tokat is the province most often associated with thin, tender leaves for wrapping. This large glass jar with a gold lid is labelled as 100% hand picked and states that it contains no added preservatives, colours or sweeteners. According to retailer information, the ingredients are simply vine leaves, water and salt.
The leaves are the traditional wrapper for sarma and dolma: fill them with seasoned rice, with or without minced meat, roll them up and simmer gently with olive oil, lemon and a little water. Before using, rinse the leaves under cool running water and, if you prefer a milder taste, soak them briefly to remove some of the brine. They can also be layered under a pot to keep stuffed vegetables from catching, or folded around cheese and herbs.
Store the unopened jar in a cool, dry place. Once opened, the retailer advises keeping the leaves in an airtight container in the refrigerator and using them within one week. Leaving them in their brine also helps stop the leaves from drying out.
