Öncü Közlenmiş Biber (Roasted Peppers) comes in a glass jar with a green lid and is ready to use straight from the jar. Roasting peppers over a flame or in an oven takes time and fills the kitchen with smoke; a jar like this gives you the sweet, lightly smoky flavour of roasted peppers whenever you want it.
In Turkish cooking roasted peppers appear on breakfast tables, in mezze and in salads. Drain them, tear or slice them and dress with olive oil, garlic, a squeeze of lemon and parsley for a quick side dish, or blend them with walnuts and garlic for a smoky ezme. They are also good in sandwiches and wraps, on pizza and flatbreads, with grilled meat or fish, and stirred into pasta sauces, rice or omelettes.
