Bodrum Extra Fine Bulgur is labelled on the front as çiğ köftelik bulgur, the very fine bulgur used for çiğ köfte. Its single ingredient is wheat bulgur, and the tiny grains swell quickly and knead into a smooth, cohesive mixture. The back label states that it is suitable for vegans, and the front of the pack carries Vegan and GMO Free badges. It contains wheat (gluten).
In Turkish cooking this grade is kneaded with tomato and pepper paste, finely chopped onion, spices and isot pepper to make meatless çiğ köfte, which is served wrapped in lettuce leaves with lemon and pomegranate molasses. It also suits fine kısır, tabbouleh-style salads and soft köfte mixtures. The pack says bulgur can be soaked in boiling water for 20 to 30 minutes or boiled for 10 to 15 minutes; fine grains like these usually need only a short soak.
Store in a cool, dry place away from direct sunlight, and after opening reseal the bag with the tab provided or use an airtight container.
