Bulgur is cracked wheat that has been cooked, dried and ground, and the extra fine grade on this Bodrum 1 kg pack is the smallest grain, labelled for çiğ köfte. Its fine texture softens quickly with little more than moisture and kneading, so it needs no long boiling. Bulgur is a wheat product and the distributor's page lists it as containing gluten.
Çiğ köfte is the classic use: knead the bulgur with tomato and pepper paste, finely chopped onion, isot or chilli flakes, cumin and a little oil and hot water until it holds together, then shape and serve in lettuce leaves with lemon and pomegranate molasses (meat-free versions are the everyday standard).
