Bodrum Ready to Eat Butter Beans, called iri fasulye in Turkish, are large, pale, creamy beans packed already cooked in an 800 g tin with a pull-ring lid. Their soft, mellow texture and mild flavour make them an easy way to put a bean dish on the table without soaking or long boiling. The front of the can carries a 'Prodotto Italiano' badge.
Large white beans are a staple of Turkish home cooking. Drain and rinse them, then simmer briefly in a tomato-and-onion base with beef, chicken or sucuk for a quick fasulye stew, or let them cool and toss them with sliced onion, parsley, boiled egg, lemon and olive oil for piyaz, the classic white-bean salad that often accompanies grilled meat and köfte. They also go well in soups and with rice.
Keep unopened tins in a cool, dry cupboard. Once opened, move leftovers to a covered container and refrigerate, and follow the date and storage guidance printed on the tin.
