Not sure what an ezme actually is or which one to pick? Turkish pastes cover a much wider range than people expect, from sweet hazelnut and pistachio spreads to savoury spiced pastes, and this category brings all of them together in one place.
What the range covers
With 29 products, this is a focused but varied shelf. Anthap leads on pistachio, with 70% and 100% pistachio paste plus a lighter 30% pistachio cream, all in 200g jars, popular for baking, desserts or simply spread on bread. Yörem covers the savoury side with acuka, a spicy walnut and pepper paste that is vegan, alongside Antep ezmesi and çemen paste, the same fenugreek-based paste traditionally used to coat pastırma. Torku's hazelnut spread and Melis clotted cream (kaymak) sit on the sweeter, breakfast-friendly end, while Marmarabirlik's plain black olive paste offers a savoury, olive-forward option for anyone who wants zeytin ezmesi without pitting whole olives themselves. Marmarabirlik, Torku and Melis names appear here alongside the more specialist Anthap and Yörem lines.
How to choose and use these pastes
If you are new to Turkish pastes, start with Yörem's Antep ezmesi or acuka as a spread on crusty bread or flatbread, since both are ready to eat straight from the jar with no cooking needed. Çemen paste is traditionally brushed onto cured meats rather than eaten alone, so use it sparingly as a coating or marinade rather than as a spread. Pistachio pastes work equally well stirred into desserts, drizzled over ice cream or spread on toast, with the higher percentage jars giving a more intense, less sweet pistachio flavour. Once opened, keep all of these pastes in the fridge and use within a few weeks for the best texture and flavour, giving them a stir if any oil separates on top.
