Dut pekmezi is a traditional Turkish molasses made by concentrating mulberries, and this 380 g jar from Koska lists a single ingredient: 100% mulberry molasses. Koska says its pekmez is made from fruit alone, with no additives, preservatives, added sugar or thickeners, and that it is produced in a closed vacuum system rather than being boiled for hours in open pans. The molasses is dark and thick, with a deep, fruity flavour that is a little tart rather than simply sweet.
In a Turkish kitchen it belongs on the breakfast table. Pour a small pool onto a plate, swirl in tahini until it turns pale and creamy, then dip fresh bread into it. It is just as good drizzled over thick yoghurt, porridge, pancakes or semolina pudding, spooned over ice cream, or used in place of sugar in glazes and marinades. Many Turkish families also stir a spoonful into warm milk on cold winter evenings.
The manufacturer's table gives 301 kcal and 73.3 g of sugars per 100 g, so a little goes a long way. Keep the jar tightly closed in a cool, dry place and use a clean spoon each time.
