Koska Carob Molasses (Keçiboynuzu Pekmezi, also called harnup pekmezi) is a dark, glossy fruit molasses in a 380 g glass jar with a purple lid and a label showing a tree beside the sea. The ingredient is simply carob molasses, and Koska states that its pekmez range is made from 100% fruit with no additives, preservatives, added sugar or thickeners, using a closed vacuum system rather than long open boiling. The Turkish producer has been making sweets and spreads since 1907.
Carob molasses has a deep, slightly caramel and cocoa-like sweetness. In Turkey pekmez is a breakfast classic: pour some onto a small plate, add a spoonful of tahini, swirl the two together and dip fresh bread into it. It also works drizzled over plain yoghurt, porridge or pancakes, stirred into warm milk, spooned over semolina halva, or used to sweeten cakes, cookies and homemade granola in place of some of the sugar.
This 380 g jar is a convenient size for trying carob molasses or for smaller households. Store it in a cool, dry place and keep the lid tightly closed after opening. For the full nutrition and allergen information, read the label on the jar.
