GAZİ Beyaz Peynir (Hirtenkäse Traditionell) is a white cheese in brine in the traditional Turkish style, packed in a resealable tin. The tin holds 500 g of cheese drained weight, or 750 g including the brine. According to the manufacturer it is made from pasteurised cow's milk, salt, microbial rennet and lactic acid cultures, with 45% fat in dry matter. The label says it is made in Germany, carries a halal certification mark and marks it as suitable for vegetarians.
Beyaz peynir is the cheese of the Turkish breakfast. Serve thick slices with tomatoes, cucumbers, olives, honey and warm bread, crumble it into a shepherd's salad or over watermelon in summer, or use it in börek, gözleme and poğaça fillings. It also softens nicely in omelettes, menemen and stuffed peppers. If the brine tastes too strong for you, soak the slices in cold water for a few minutes before serving.
Per 100 g of drained cheese the manufacturer lists 250 kcal, 19.8 g fat, 16.5 g protein and 2.9 g salt. Keep the tin refrigerated at +4 °C to +8 °C. After opening, keep the leftover cheese in its brine in a closed container at the same temperature and eat it within a few days, as the label advises.
