Description

Profiterol is a pastry-shop favourite across Turkey: small, airy choux-style balls filled with soft cream and smothered in glossy chocolate sauce. This Dr. Oetker box is a three-in-one kit, holding a flour mix for the pastry balls, a cream mix for the filling and a chocolate sauce mix, and the front of the pack says it makes 25 to 30 pieces. It also promises a practical method with no pre-cooking stage for the dough.

Line a baking tray with baking paper. Tip the flour mix into a bowl, add eggs, water, milk and oil, and beat with an electric mixer on low and then high speed for three minutes. Use one spoon to scoop half-dessertspoon portions of the batter and a second spoon to push them onto the paper, leaving space between them, then bake until lightly golden and leave to cool. For the sauce, stir the sauce mix into milk in a pan over medium heat; once it boils, turn the heat down and let it bubble for 2 to 3 minutes more while stirring, then cool it, stirring now and then. Finally whisk the cream mix with cold milk for about 3 to 4 minutes, spoon it into a piping bag and fill the balls through a small hole in the base or by cutting them in half.

Pour the chocolate sauce over the filled balls just before serving, in small bowls or on a shallow platter. The ingredient list includes wheat flour, wheat starch and milk protein. Keep the unopened box in a cool, dry place.
