Dried hibiscus flowers are the base of the deep ruby-red infusion known across the Middle East, North Africa and the Mediterranean, and increasingly in Turkish homes as hibiskus çayı. This Bodrum pack holds 150 g of dried flowers and is marked 100% natural on the front. The petals brew into a tart, cranberry-like drink with a vivid red colour.
To make a pot, put a small handful of flowers into a teapot or jug, pour over freshly boiled water and steep for several minutes until the colour is deep, then strain. Sweeten with honey or sugar if you like the tartness softened, or add a slice of orange, a cinnamon stick or a few cloves while it steeps. Left to cool and served over ice with lemon, it becomes a refreshing summer drink; some cooks also simmer the flowers with sugar to make a syrup for drinks and desserts.
Because the flowers are dried and delicate, keep the bag well sealed or decant it into a dry airtight jar and store it in a cool cupboard away from light and humidity so the colour and flavour stay fresh. Check the pack for the date and any further guidance.
