Attiki is one of Greece's best-known honey brands, with 'since 1928' printed on its labels, and this 227 g jar holds pure Greek honey gathered from wild flora and thyme. The ingredient list is simply natural honey, so there are no additives to look for, just a fragrant, amber-coloured honey in a compact jar that is easy to keep on the breakfast table.
At a Turkish breakfast, honey belongs beside kaymak, butter and fresh bread, and it is just as good over sheep's-milk cheese, thick strained yogurt or warm pancakes. Stir a spoonful into black tea or warm milk, drizzle it over walnuts for a quick dessert, or brush it over pastries and roasted vegetables for a glossy finish. A honey with a noticeable thyme note also makes a pleasant sweet-and-salty pairing with white cheese.
Store the jar in a cool, dry place with the lid closed. Natural honey can thicken or crystallise over time; this is harmless, and a few minutes in a bowl of warm (not hot) water will loosen it again. Honey is not recommended for infants under 12 months.
