Melis Tulum Cheese is a Turkish-style tulum cheese sold as a 300 g wedge-shaped block. The front of the pack states that it is made from 100% sheep's milk, which is what gives tulum its rich, savoury character. Tulum is a firm, crumbly cheese with a salty, slightly sharp flavour that takes its name from the animal-skin bag in which it was traditionally ripened in Anatolia.
It belongs on a Turkish breakfast table with tomatoes, cucumber, olives and fresh bread, and it pairs beautifully with walnuts and honey. Crumble it over a salad of rocket and watermelon, fold it into börek or gözleme fillings, stir it through scrambled eggs, or serve it as a meze with pickled peppers. Because tulum is salty, season the other ingredients in a dish lightly.
This is a chilled cheese, so keep it in the fridge, wrapped in its pack or in an airtight container. Check the label for the storage temperature, the best-before date and the full ingredient list.
