Marmarabirlik Cracked Green Olives, known in Turkish as kırma zeytin, are green table olives that are lightly cracked so the brine and any seasoning can reach the flesh. The label describes them as "işlem görmüş" brine olives and shows a halal certification mark. The glass jar holds 850 g of drained olives; the producer's catalogue gives the total net weight of the 850 g jar as 1500 g. These are large olives; the exact size grade is printed on the jar.
Cracked olives are a fixture of the Turkish breakfast table, served with white cheese, tomatoes, cucumbers and warm bread. A favourite way to dress them is to rinse the olives, then toss them with olive oil, lemon juice, crushed garlic, chilli flakes and thyme or oregano and let them rest for an hour before serving. They also go well on a meze board next to hummus, stuffed vine leaves and fresh herbs, or chopped into salads.
Store the unopened jar somewhere cool and dry. The producer's catalogue lists a 24-month shelf life for this jar. After opening, keep the olives under their brine, close the lid tightly and refrigerate them.
