These Marmarabirlik green olives are large (4XL-3XL, 141 to 180 per kg) and filled with red pepper. The label calls them processed green olives in brine stuffed with red pepper. The jar shows a net quantity of 650 g and a drained weight of 400 g, so about 400 g is olives and the rest is brine. Please keep that in mind when comparing it with jars labelled only by net weight.
The pepper filling gives each olive a sweet, slightly tangy note against the salty fruit, and the red colour looks attractive on a platter. Serve them on a breakfast or meze plate, skewer them with cheese cubes for party snacks, slice them over pizza and salads, or chop them into pasta, rice and sandwich fillings. They also sit well next to dry-cured black olives for a two-colour olive dish.
Store the jar in a cool, dry place away from light. After opening, keep the olives under their brine and refrigerate the jar, using a clean spoon each time.
