Koska Pekmez Mix is a blend of five fruit molasses in a 300 g glass jar. According to the back label it contains carob molasses (23%), mulberry molasses (23%), date molasses (22%), grape molasses (22%) and andız, or juniper berry, molasses (10%). Each molasses is boiled in closed kettles at no more than 70 °C under vacuum, which the producer says keeps the aroma and colour of the fruit, and the five are then blended in fixed proportions. Per 100 g it provides 283 kcal and 69.3 g of sugars, with no added ingredients listed.
Pekmez is a staple of the Turkish breakfast table. The classic way to enjoy it is tahin-pekmez: pour some pekmez on a small plate, stir in tahini and scoop it up with fresh bread. It is equally good drizzled over yoghurt, porridge, pancakes or crepes, stirred into warm milk, or used to sweeten salad dressings, marinades and baked desserts in place of sugar syrup. A mixed pekmez like this one gives a deeper, rounder flavour than a single-fruit jar.
Store the jar in a cool, dry place and keep it in the fridge once opened, as the label advises. The best-before date and lot number are printed on the lid.
