Koska Grape Molasses (Üzüm Pekmezi) comes in a 700 g plastic bottle with a red cap and holds the dark, syrupy grape concentrate that Turkish kitchens have used for generations. The retailer listing gives a single ingredient, grape molasses, and its nutrition panel shows 280 kcal per 100 g, with 70 g of carbohydrate (69.9 g sugars), 0.1 g of fibre and no fat or protein. The bottle makes it easy to pour out just what you need for breakfast or cooking.
The best-known way to serve pekmez is tahin-pekmez: mix it with tahini on a plate and dip in fresh bread, simit or pide for breakfast. Drizzle it over yoghurt, porridge, pancakes or vanilla ice cream, or use it in place of sugar syrup in semolina halva, pumpkin dessert (kabak tatlısı), salad dressings and meat glazes. A teaspoon stirred into warm milk is a traditional way to sweeten it.
Store the bottle in a cool, dry place with the cap closed. A slight sediment can form at the bottom; it is not a sign of spoilage. Stand the bottle in warm water for a while and mix it before use.
