Description

Koska Carob Extract (Keçiboynuzu Özü) is a thick, dark syrup sold in a 310 g glass jar with a gold twist lid and a purple label. According to the product information, it is produced from carob fruit using cold extraction, formation of the carob juice, resting, and evaporation at low temperatures. It is made in Türkiye by Koska, the Turkish maker of halva, tahini and pekmez that has been trading since 1907.

Carob extract has a deep, caramel-like sweetness, and in Turkish kitchens it is used much as pekmez is. Stir a spoonful into warm milk or hot water for a comforting drink, drizzle it over plain yoghurt, porridge, pancakes or ice cream, or mix it with tahini and spread it on bread at breakfast. It can also replace part of the sugar or honey in cakes, cookies and energy balls. Because it is already thick, a little goes a long way.

A slight sediment caused by crystallisation can form in carob extract over time and does not mean the product has spoiled; stand the jar in hot water for a while and stir it before use. Keep the jar in a cool, dry place.
