Ellinby's All-Season Honey is labelled "The Beekeeper's Classic" and is described on the jar as a 100% natural honey from wild pines and summer flowers, from the shores of the Aegean Sea. It is a product of Greece, produced in Naousa in the Imathia region, and comes in a 250 g glass jar with a dark screw lid.
On a Turkish breakfast table this kind of honey sits comfortably next to kaymak, white cheese, olives and fresh bread; it can also be stirred into a bowl of strained yogurt, spooned over pancakes, or used instead of sugar in a glass of hot tea or milk. In the kitchen it adds sweetness to baked sweets, nut-filled pastries and salad dressings for something like carrot or beetroot salads.
The label notes that crystallisation is a natural process: if you prefer your honey liquid, warm the jar gently in warm water, never boiling water. Keep it in a cool, shaded place. As the jar states, honey is not suitable for children under 12 months of age.
