Duru İri Pilavlık Bulgur is the extra coarse grade of Duru's pilaf bulgur. It is made in Karaman, Türkiye, and the ingredient list contains just the bulgur itself. Duru says its bulgur is milled in a natural stone mill without polishing, so the bran and natural structure of the grain are kept.
The bigger grain gives a firm, separate, slightly chewy pilaf that holds its shape well. The producer lists soups, pilafs, salads, desserts, dolma and sarma among suitable dishes. Do not soak or wash it; cook it with 2 cups of boiling water to 1 cup of bulgur, covered over a low heat, and rest it for a few minutes before serving. It works particularly well as the base for a tomato-and-pepper bulgur pilaf, or as a warm bed for grilled chicken and vegetables.
Store the pack in a cool, dry place away from sunlight; the stated shelf life is two years. Contains wheat gluten.
