Papouis Athienitico is a traditional cheese of Cyprus, sold as Cypriot Ricotta and clearly labelled "unsalted". According to the label it is made from pasteurised whey and milk from cows, goats and sheep, which places it in the family of fresh whey cheeses: pale, soft-textured and mild, with a gentle dairy flavour. The pack also carries the Vegetarian Society approved logo.
With no added salt, it adapts easily to sweet or savoury cooking. Crumble it into scrambled eggs with spring onion, stir it through warm pasta with lemon zest and black pepper, or mash it with chopped dill and parsley as a filling for su böreği, filo parcels or stuffed courgettes. On the sweet side, it can be whipped with a little sugar and vanilla for a light cheesecake-style cream, or folded into pancake and fritter batters. Cooks who know Turkish lor peyniri will find that it works in many of the same recipes.
Keep it in the fridge at 1 to 4 °C, as printed on the pack, and use it by the date shown. Fresh whey cheeses are delicate, so once the pack is open, keep the cheese covered in the fridge and use it up promptly.
