Description

Çizik olives are green olives that are lightly scored with a few fine cuts so the brine can enter and mellow the natural bitterness. The result is a firm, crisp and fresh-tasting olive that is quite different from dark, dried black olives. This Marmarabirlik jar holds the M grade, around 261 to 290 olives per kilogram, and the label calls it a natural green olive, brined and scratched ("doğal yeşil zeytin, salamura çizik").

On a Turkish breakfast table çizik zeytin is usually served plain with white cheese, tomato, cucumber and bread. For extra flavour, drain a portion and toss it with olive oil, lemon juice, crushed garlic, thyme and a few chilli flakes; the cuts take up the dressing well. It also works in a shepherd's salad, on a meze plate, or in a sandwich with cheese and fresh greens.

Retailer labels advise storing the jar in a cool, dry place and, after opening, keeping the olives in their own brine in the refrigerator. Always use a clean spoon so the brine stays clear.
