Tarhana is one of Anatolia's oldest pantry foods: a fermented mixture traditionally made from cereals and yoghurt, dried and then cooked into a sour, warming soup. Bodrum Tarhana Doğal Cips turns that idea into a crunchy snack. The thin, pale, flat chips come in a red resealable bag decorated with ears of wheat and sprigs of herbs, with "Tarhana" and "Doğal Cips" on the front, a "100% Natural Product" mark and a green "Suitable for Vegetarians" badge.
Expect a gently tangy flavour that is quite different from ordinary potato crisps. Eat them straight from the bag, put a bowl out with tea when friends drop by, or crumble a few over lentil soup or a yoghurt dip for extra crunch. A 200 g bag is a generous size for sharing on a family film night.
Close the zip after opening and keep the bag in a cool, dry cupboard so the chips stay crisp. Tarhana is traditionally made with wheat and yoghurt, so if you avoid gluten or milk, read the ingredient list and allergen information on your pack carefully before eating.
