Gherkin sticks are small pickled cucumbers cut lengthwise into long, even spears, which makes them quick to pick up, slide into a sandwich or lay beside a plate. This Bodrum jar holds 670 g under a red twist-off lid. The label ("Dilimli Salatalık Turşusu" in Turkish) carries vegan, gluten free and non-GMO badges.
In Turkish homes turşu is part of the table rather than an extra: serve the sticks with grilled kebab, doner or kofte, alongside a tost or a plate of cheese and olives at breakfast, or on a meze platter with hummus and ezme. They are just as handy in burgers, wraps and deli sandwiches, and chopped small they can lift a potato salad or a yoghurt dip.
Store the unopened jar in a cool, dry cupboard. Once opened, keep it in the fridge with the pickles covered by their brine and use clean utensils to lift them out.
