Hellim peyniri is a semi-hard grilling cheese that keeps its shape when heated, so it can be fried or grilled without melting away. This pack holds four 125 g blocks of grill cheese made from cow's milk, as stated on the front of each pack. The label says it was produced in Bulgaria, and the pack carries a Halal logo.
Slice the block about one centimetre thick and cook it in a dry non-stick pan or on a hot grill for a minute or two on each side, until golden. Hellim is a favourite at Turkish and Cypriot breakfast tables with tomato, cucumber and olives, and it is delicious inside a wrap or pitta, over a fresh salad with mint and lemon, or threaded onto skewers with vegetables. It is naturally salty, so it rarely needs extra seasoning.
Keep it in the fridge and follow the storage advice and date printed on the pack. Once a pack is opened, wrap any leftover cheese or put it in a closed container in the fridge, and use it within a few days.
