Çiğ köfte comes from Şanlıurfa in south-eastern Türkiye, where bulgur is kneaded for a long time with tomato and pepper pastes and spices into a soft, spicy mixture. Today the meat-free version is the one most people eat, and this Sohbet Urfa style box is labelled as a vegan bulgur snack. Inside the 340 g box you get the shaped bulgur pieces together with two sauces, a hot sauce and a pomegranate (nar ekşisi) sauce. The box carries a vegan badge and a halal logo.
Serve it the way it is eaten at home: lay a few pieces on a lettuce or rocket leaf, wrap them in lavash or flatbread with fresh parsley, mint, sliced onion and tomato, and add a squeeze of lemon plus as much of the hot and pomegranate sauce as you like. Set out with pickles and cacık, it also makes an easy no-cook dish for guests or a light lunch.
This is a chilled product: keep it in the fridge (around +2 to +7 °C) and eat it by the date printed on the front of the pack. It is made from wheat bulgur, so it contains gluten; a retailer's ingredient listing also mentions walnut, so please read the complete allergen information on the pack before serving.
