Description

This is the hot “acılı” version of Tombul's additive-free home-style tarhana, the traditional Turkish soup base made by fermenting flour, yogurt and vegetables and then drying and grinding the result. According to the manufacturer it is made from whole wheat flour, fresh hot red capia pepper, tomato, strained yogurt, onion, mint, salt and sourdough. The pepper gives it a warming, balanced heat rather than a fiery one, and the maker states that no colourings, flavourings or preservatives are used.

Prepare it by dissolving one or two tablespoons in a bowl of cold water until there are no lumps, then pour it into a pot with water or stock and cook, stirring, until it comes to the boil. Serve it with extra chilli flakes and dried mint to taste. On a cold evening it is a quick, warming bowl, and a spoonful stirred into lentil or tomato soup adds body and a gentle spice.

Store the dry mix in a cool, dry place with the bag or jar tightly closed. It contains wheat flour and yogurt, so it is not suitable for anyone avoiding gluten or milk.
