Natürel sızma zeytinyağı is the top grade of olive oil, made from olives by mechanical means only. This Kristal tin carries the 'Soğuk Sıkım' (cold pressed) mark and the brand's 1938 emblem, and at 4 litres it is meant for households that go through a lot of oil.
In Turkish cooking, extra virgin olive oil is the base of the 'zeytinyağlılar', the cold or room-temperature vegetable dishes such as stuffed vine leaves, green beans, artichokes and leeks, where the flavour of the oil really shows. Drizzle it over a shepherd's salad, over white cheese with tomatoes, into a bowl of lentil soup, or use it for dipping fresh bread. It also suits gentle sautéing and low-heat cooking.
A tin helps keep light away from the oil. Store it in a cool, dry place, close the cap tightly after each use and, if you wish, decant a smaller amount into a bottle for the table.
