Chilled items & warm-weather notice

We ship chilled (perishable) foods with ice-gel packs, kept refrigerated. In warm weather, light oil sweating on cured products such as sucuk/pastırma, or softening of cheese, is normal and not a sign of spoilage — it returns to normal once chilled. Please refrigerate items immediately on delivery and be available to receive your order on the delivery day.

Perishable foods are exempt from the 14-day change-of-mind return; your statutory rights for genuine quality or safety issues remain unaffected.

Description

Şalgam is a tangy, purple-red fermented drink from Adana in southern Turkey. Traditionally it is made by fermenting black (purple) carrot, often together with turnip, in water and salt, and the lactic fermentation gives it its sharp, sour and savoury taste. This mild (acısız) version has no chilli heat, so the sourness of the drink comes through on its own.

In Turkey şalgam is a classic partner for kebab, lahmacun and grilled meats: served ice-cold, its sharpness cuts through rich, smoky food and refreshes the palate. In some regions it is even mixed with ayran. Traditional şalgam can be slightly cloudy, so give the bottle a gentle shake before pouring and serve it well chilled.

The 1 litre glass bottle is made for the table: pour it into small glasses and share it with family and guests around a kebab or mixed-grill meal. Traditional recipes use a sourdough starter that can contain cereal (bulgur), so please check the label on the bottle for the full ingredient list, allergen information and storage instructions.
