Description

Şalgam suyu is one of the best-loved traditional drinks of southern Türkiye, and Adana is the city most closely associated with it. It is a fermented drink with a deep purple-red colour and a sour, salty, savoury taste; the colour traditionally comes from black carrot, and turnip is often added as well. This is the acılı (spicy) version, so each sip starts tangy and finishes with a pleasant chilli warmth.

Serve it very cold, straight from the fridge, in a small glass or a tall tumbler. In Adana it is poured alongside kebabs, liver, lahmacun and other grilled or spiced dishes, because its sourness and salt cut through rich, fatty food. It also goes well with börek, fried fish, or a plate of olives and pickles on a meze table.
