Duru Pilavlık Bulgur is the coarse grind of bulgur used for pilaf, produced by Duru in Karaman, Türkiye. The only ingredient is bulgur, and the pack shows that it is made from durum wheat. Duru says it is the only bulgur milled in a natural stone mill without polishing, which keeps the bran and the natural structure of the grain.
The 2.5 kg bag suits households that cook bulgur often. Besides plain pilaf, the maker lists soups, salads, desserts and dolma or sarma fillings as typical uses. Do not soak or wash it: use 2 cups of boiling water for 1 cup of bulgur, cover and cook gently until the water is absorbed, then let it rest. Fry some onion and a spoonful of tomato paste first for a classic Turkish bulgur pilaf, and serve it with yoghurt, pickles or alongside kebabs and stews.
Keep the bag closed in a cool, dry place away from sunlight. The stated shelf life is two years. Contains wheat gluten.
