Duru Akdeniz Baldo Pirinç is baldo rice, one of the best-loved varieties for pilaf in Turkey and the wider Mediterranean. The front of the pack describes it as long grain baldo rice, and its only ingredient is rice. Baldo grains absorb liquid well, which is why they stay tender and separate in a classic pilav.
For a simple Turkish pilav, rinse the rice until the water runs clear, soak it in warm salted water for 20 to 30 minutes and drain. Melt butter with a little oil, stir the rice in until the grains turn glossy, add about one and a half times its volume in hot stock or water, cover and cook gently for around 15 minutes. Rest it off the heat under a tea towel for ten minutes. It pairs with kuru fasulye, chicken and meat stews, grilled kebabs and stuffed vegetables, and also works for sütlaç and stuffings.
Store the bag in a cool, dry place and close it tightly after opening. Check the pack for the full storage and origin details.
