Tosya is one of Turkey's best-known pilaf rices and takes its name from the town of Tosya in Kastamonu province, the area it is traditionally linked with. The medium-length grains cook into a soft, plump pilaf that holds its shape. On this Bodrum pack the ingredient list is simply 'Tosya rice'. The label also states that the rice is a product of more than one country and is suitable for vegans, and the pack is marked gluten free. Per 100 g it provides 1504 kJ (354 kcal), 80 g carbohydrate, 6.7 g protein, 0.4 g fat and 0.01 g salt.
To make a Turkish-style pilav, wash the rice well and let it drain in a sieve. Melt a generous spoon of butter, or butter with a little oil, in a heavy pan and stir the rice in it for two or three minutes until the grains look glossy and slightly translucent. Pour in hot stock or water, roughly one and a half cups for each cup of rice, season with salt, cover and cook on low heat for about 15 minutes until the liquid has gone. Rest the pilav off the heat for 10 to 15 minutes before serving. It goes well with kuru fasulye, chicken, grilled meats and a bowl of yoghurt, and you can add toasted vermicelli or chickpeas for variety.
Store the pack in a cool, dry place away from direct sunlight. Once opened, reseal it using the tab provided or keep the rice in an airtight container.
