Chilled items & warm-weather notice

We ship chilled (perishable) foods with ice-gel packs, kept refrigerated. In warm weather, light oil sweating on cured products such as sucuk/pastırma, or softening of cheese, is normal and not a sign of spoilage — it returns to normal once chilled. Please refrigerate items immediately on delivery and be available to receive your order on the delivery day.

Perishable foods are exempt from the 14-day change-of-mind return; your statutory rights for genuine quality or safety issues remain unaffected.

Description

Barbunya, known abroad as rosecoco, borlotti or cranberry beans, is a medium-sized dried bean with a cream skin marked by red-pink speckles. The speckles fade during cooking, leaving a soft, creamy-textured bean with a mild, slightly nutty flavour. Bodrum's 500 g pack is a sensible size for a single family pot, and it is a good way to try barbunya if you usually buy canned.

In Turkish cooking barbunya is the star of barbunya pilaki, a dish of beans simmered in olive oil with onion, carrot, potato, garlic and tomato, then served cold with a squeeze of lemon. It also goes into soups, stews with meat, salads with onion and parsley, and into pilaf-style dishes. To prepare the beans, pick them over, soak them in plenty of cold water for 8 to 12 hours, drain and discard the soaking water. Cover with fresh water and boil briskly for at least 10 minutes, then simmer for around 45 to 60 minutes until tender. Add salt near the end. Dried beans must never be eaten undercooked.

Store the dry beans in a cool, dry place away from direct sunlight, and keep an opened pack closed tightly or in an airtight jar.
