Chilled items & warm-weather notice

We ship chilled (perishable) foods with ice-gel packs, kept refrigerated. In warm weather, light oil sweating on cured products such as sucuk/pastırma, or softening of cheese, is normal and not a sign of spoilage — it returns to normal once chilled. Please refrigerate items immediately on delivery and be available to receive your order on the delivery day.

Perishable foods are exempt from the 14-day change-of-mind return; your statutory rights for genuine quality or safety issues remain unaffected.

Description

Barbunya, also sold as rosecoco, borlotti or cranberry beans, is a dried bean with a cream skin and red-pink speckles that cooks into a tender, creamy bean with a gentle, nutty taste. The 1 kg pack from Bodrum suits households that cook with pulses every week, or anyone who likes to prepare a large batch of barbunya pilaki for the whole family.

Turkish cooks use barbunya for pilaki, simmered in olive oil with onion, carrot, potato, garlic and tomato and eaten cold with lemon, as well as for soups, meat stews and salads with onion, parsley and a drizzle of olive oil. Because a kilo is a lot of beans, it helps to cook in batches: soak what you need in cold water for 8 to 12 hours, discard the water, boil in fresh water briskly for at least 10 minutes and then simmer for 45 to 60 minutes until soft. Cooked beans keep for a few days in the fridge and can be frozen in portions, ready for quick weekday meals.

Keep the dry beans in a cool, dry place away from direct sunlight. After opening, close the pack well or pour the beans into an airtight jar.
