Bodrum Brown Coarse Bulgur, labelled in Turkish as esmer pilavlık bulgur, is cracked wheat with a single ingredient on the label: wheat. The coarse brown grains have a nutty flavour and keep a firm, slightly chewy texture once cooked, and the front of the pack carries a '100% natural' badge. The label marks it suitable for vegans. It contains wheat (gluten).
The pack explains that bulgur can be boiled in water for 10 to 15 minutes, or put in a heatproof bowl, covered with boiling water and left to soak for 20 to 30 minutes until the water is absorbed and the grains are tender; chicken stock adds more flavour. It can also be boiled from raw in soups and stews. Coarse bulgur is the grain for a classic Turkish bulgur pilavı, cooked with sautéed onion, tomato paste and butter or oil, and it works well in stuffings too.
Keep the bag in a cool, dry place away from direct sunlight, and after opening reseal it with the tab provided or move the bulgur to an airtight container.
