SuperFresh Bamya is frozen pointed okra in a 450 g bag, with okra as the only ingredient and Türkiye as the origin. The pack says you can cook the pods without waiting for them to thaw and suggests about 25 to 30 minutes in a pot over medium heat, so a weekday okra dish needs no advance planning.
Bamya is a cornerstone of Turkish home cooking. For the everyday version, sauté onion in olive oil or butter, add tomato paste and the frozen okra, season with salt and a pinch of sugar, add a little hot water and cook gently until tender. Many cooks add a squeeze of lemon juice to keep the pods firm and less slippery, and the dish is served either warm with rice or cold as a zeytinyağlı starter. It is also very good with cubes of lamb or beef in a richer meaty stew.
Keep the bag in the freezer at -18 °C, and do not refreeze the okra once it has thawed. Take out only what you need, close the bag firmly and return it to the freezer straight away.
