Muratbey Helix, sold in Türkiye as Burgu peynir, is a fresh white cheese made from pasteurised cow's milk and shaped into long twisted strands that sit in brine inside a round tub. The pack shows a drained weight of 200 g. Muratbey states that the cheese has 25% less salt and that it contains no trans fat, sweeteners or gluten. Per 100 g the producer lists about 242 kcal, 20 g fat, 14.5 g protein and 1.8 g salt.
The spiral shape is the point: the strands unwind into thin ribbons that are easy to eat with the fingers and look good on a breakfast plate without any effort, and Muratbey presents it as a cheese for adults and children alike. Muratbey's own recipe list includes a potato dish, a warm salad, a Mediterranean salad, tortilla wraps, a pan börek, simit and vegetable muffins made with this cheese. At home you can also pull a few strands over a tomato and basil salad, fold them into an omelette, or serve them alongside olives and fresh bread. Rinse briefly in cold water if you want to wash off surface salt.
Keep the tub refrigerated at +2 to +4 °C in its original packaging and brine. After opening, eat the cheese within a short time and return any leftover strands to the brine in the closed tub.
