Hünnap Carob Extract (Keçiboynuzu Özü) is a thick, dark and naturally sweet syrup made from carefully selected carob pods grown in Turkey's Mediterranean region. According to the manufacturer, it is produced by cold infusion: the water is evaporated under vacuum at a low temperature instead of being boiled off with high heat, which keeps the HMF value between 0 and roughly 10 mg/kg. The only ingredient is carob extract. It contains the fruit's own sugars but no added sugar, thickener, preservative or colouring, and the jar carries a gluten-free seal and a 'Yerli Üretim' (domestic production) badge.
In Turkish homes carob extract is a familiar part of breakfast. Spoon it onto fresh bread, swirl it with tahini for the classic tahinli keçiboynuzu spread, drizzle it over plain yoghurt, porridge or pancakes, or stir a spoonful into warm milk for a simple sweet drink. Its rich, sweet taste can also stand in for molasses in cakes, cookies and dessert sauces. The maker recommends 5 ml (one dessert spoon) three times a day for adults and children over 11, with smaller amounts for younger children as set out in its guidance. The product is registered in Türkiye as a food supplement, not a medicine, so anyone pregnant, breastfeeding or taking medication should ask a doctor first.
Per 100 g the extract provides 343 kcal, 80 g carbohydrate (of which 62 g sugars), 4.4 g fibre and 2.9 g protein, with no fat and 0.08 g salt, plus naturally occurring potassium (1285 mg), calcium (123 mg) and magnesium (58.2 mg). Keep the jar in a cool place out of direct sunlight; once opened it can be kept in the fridge. A little sediment at the bottom comes from the product's natural density and is not a sign of spoilage.
