Gazi Beyaz Peynir Hirtenkäse Traditionell 55% is a brined white cheese in the style of Turkish beyaz peynir, sold in Gazi's tall 800 g yellow tin with a red lid. Gazi is a cheese brand of garmo AG in Germany, and its product page lists a short recipe: pasteurised cow's milk, salt, microbial rennet and lactic cultures. The cheese carries 55% fat in dry matter; Gazi's nutrition table gives 307 kcal, 27.1 g fat and 2.8 g salt per 100 g, so it is creamy without being heavy and has the clean, salty tang typical of brined cheese. The manufacturer marks it as suitable for vegetarians and halal.
On the Turkish table this cheese belongs to breakfast: slice it beside ripe tomatoes, cucumber and olives with fresh bread and a glass of tea. It crumbles easily into shepherd's salad, works as a filling for börek, gözleme and pide, and suits omelettes and menemen. If it tastes saltier than you like, soak the slices in cold water for a short while before serving.
Keep the tin refrigerated and use the cheese by the date printed on the pack. Once opened, keep the remaining cheese covered in its own brine in a closed container in the fridge. Contains milk.
