Gazi Koyun Peyniri is a sheep's milk cheese stored in brine. It is made from pasteurised sheep's milk, salt, microbial rennet and lactic acid cultures and has 50% fat in dry matter. Sheep's milk gives the cheese a rich, full flavour and the typical, mildly spicy aroma that the manufacturer describes, which sets it apart from cow's milk white cheese. The resealable 800 g tin is meant for families and for those who eat a lot of cheese.
In Turkish cooking, koyun peyniri is a breakfast favourite, served in slices with tomatoes, cucumbers, olives and warm bread. It is also excellent crumbled over salads and roasted vegetables, mixed into doughs and fillings for börek and gözleme, or paired in summer with Mediterranean fruit such as melon, peaches and grapes, as the manufacturer suggests. Its firm texture makes it easy to slice, cube or crumble.
Keep the cheese refrigerated and follow the storage and use-by instructions on the pack. After opening, keep the remaining cheese covered with its brine and close the lid firmly.
