Duru Aşurelik Buğday is peeled wheat: whole wheat kernels with the outer hull removed, packed in a 1 kg bag. The label lists one ingredient, wheat, and it is the grain traditionally used for aşure, the sweet pudding of dried fruit, nuts and pulses that Turkish families cook in large pots and share with neighbours, especially during Muharram.
The kernels are firm and need patience. Rinse them, soak overnight in plenty of cold water, then boil in fresh water until they are soft but still hold their shape; this softened wheat is the base to which chickpeas, white beans, dried apricots, figs, sugar and spices are added for aşure. The same pre-soaked wheat also goes into hearty winter soups, or can be simmered like a chewy pilaf with onion and butter and served beside meat dishes.
Store the sealed bag in a cool, dry place and keep opened wheat in an airtight container. This product is made from wheat and therefore contains gluten.
