Köftelik bulgur is one of the fine grades of bulgur, and this Duru version is made from durum wheat. The pack is labelled "Fine bulgur" in English and carries the stone-mill banner "Taş değirmenin lezzete ikramı", and Duru lists the product as "Köftelik Bulgur (Kısırlık)". The small grains take up liquid quickly, which makes this grade the usual choice for kısır, the tangy tomato and pomegranate molasses bulgur salad, for bulgur köfte and for the soft dough used in many regional köfte recipes.
The manufacturer advises not to wash the bulgur before use, and the label's preparation note adds that it should not be soaked either; for a simple pilaf-style side, cook one cup of bulgur with two cups of water. For kısır, pour a little boiling water over the bulgur, cover and let it steam until tender, then add tomato and pepper paste, olive oil, spring onion, parsley and mint, and finish with lemon juice or pomegranate molasses. It also thickens soups and can be mixed into minced-meat köfte as a binder.
It contains wheat gluten and is not suitable for gluten-free diets. Duru recommends storing it in a cool, dry place out of direct sunlight; keep the bag tightly closed once opened.
