Rize Turist is one of Çaykur's best-known black teas, instantly recognisable by its yellow pack. Çaykur's own copy says there is hardly a home in the country it has not entered, nor a friendly chat it has not joined, and that it is not called 'Gerçek Sarı' (the real yellow) for nothing. The 1 kg bag holds loose black tea, labelled Siyah Çay (black tea), from Çay İşletmeleri Genel Müdürlüğü in Rize.
This is the everyday tea for the çaydanlık: put water in the lower pot, tea in the upper pot, pour a little boiling water over the leaves and keep it on very low heat for about 15 minutes. Serve it in a tulip glass, either strong 'koyu' or lightened with hot water 'açık', with sugar cubes on the side. It goes with a simple breakfast of cheese and olives, with börek in the afternoon, and with almost any conversation.
A 1 kg bag lasts a large household a good while, so after opening, close it firmly or decant into an airtight tin and keep it in a cool, dry cupboard away from spices and cooking smells.
