Green peas, or bezelye, appear all over Turkish cooking: in meaty stews, rice pilafs, egg dishes and the comforting vegetable-and-lamb casserole known as etli bezelye. This Burcu jar holds 570 g of peas preserved in a simple brine of water and salt, so there is no shelling or boiling to do and a good portion is always in the cupboard.
For a quick etli bezelye, brown diced onion and a little meat or sausage, add tomato paste, carrot and the drained peas, and simmer for a few minutes with a splash of water. Stir them through buttery rice, add them to a vegetable soup, or toss them with mint and lemon for a cold salad. They are also a convenient filling for omelettes and a simple side for chicken or fish.
Store the unopened jar in a cool, dry place. After opening, keep the leftover peas covered in the fridge and use them within a few days. Please check the label on your jar for the full ingredient and allergen details.
