Artichoke is one of the most prized vegetables of the Aegean table, normally cooked fresh with olive oil, carrot, peas and dill in the classic zeytinyağlı enginar. This Burcu jar offers the convenience of ready-prepared artichokes in a mild brine of water, salt and citric acid, with ascorbic acid added as an antioxidant. The glass jar holds 540 g in total, of which 310 g is drained artichoke.
Drain the pieces and use them straight from the jar: slice them into a rocket or lettuce salad with lemon and olive oil, fold them through warm pasta or rice, scatter them over pizza or a flatbread, or serve them as a cold meze with a drizzle of olive oil, a squeeze of lemon and fresh dill. The maker's table lists 37 kcal and 3.5 g of fibre per 100 g.
Keep the unopened jar in a cool, dry place away from direct sunlight, and avoid any jar that is leaking or has a swollen lid. Once opened, transfer any leftovers with their brine to a covered container and keep them refrigerated.
