Başak Galeta Unu is fine dried breadcrumbs, labelled in Turkish as galeta unu, in English as dried bread flour and in German as Paniermehl, sold in a 250 g bag. It is a staple of the Turkish pantry for giving fried and baked foods a golden, crunchy coating.
Galeta unu is used to bread chicken and veal schnitzel, fish fillets, croquettes, cheese-filled rolls and vegetable fritters: dip the pieces in flour and beaten egg first, then press them into the crumbs before frying or baking. It is also stirred into köfte mixtures to help bind them, and sprinkled over gratins for a crisp top. Fine crumbs like these give an even, thin crust rather than a chunky one.
Breadcrumbs are traditionally made from dried bread, so if you need to avoid gluten or any other allergen, read the full ingredient and allergen list on the pack before use. Once opened, fold the bag closed or move the crumbs to a jar, keep them in a cool, dry place and use them within the time stated on the pack.
