Öncü Domates Salçası is a classic Turkish tomato paste, packed in a 700 g glass jar. According to the supplier information the only ingredient is tomatoes, concentrated into a thick, deep red paste, and the jar is made in Türkiye. Öncü lists this size as part of its everyday glass-jar range, which makes it a practical pantry staple for cooking at home.
In Turkish cooking, salça is where many dishes begin. Fry a spoonful in a little butter or oil with chopped onions until it darkens and smells sweet, then build menemen, lentil soup, bulgur or rice pilaf, kuru fasulye, köfte sauce or stuffed vegetables on top. For a quick cooking sauce, stir a tablespoon into hot water and pour it over a casserole or stew. It also works in pasta sauces, shakshuka-style egg dishes and marinades for grilled chicken or meatballs.
Per 100 g the paste provides about 125 kcal, 26 g of carbohydrate, 5 g of fibre and 5 g of protein, with very little fat. Keep the unopened jar in a cool, dry place. Once opened, use a clean spoon, close the lid firmly and keep the jar in the fridge, where a thin layer of oil on top helps it stay fresh.
