Lor is the soft, crumbly fresh curd cheese of Turkish home cooking, and Muratbey packs it in a 500 g bag ready to use. According to the ingredient list recorded for this pack, it is made from whey from pasteurised cow's milk with salt and calcium chloride as a stabiliser, which gives it a mild, lightly milky flavour and a fine, moist crumb. The producer states that the cheese contains no trans fat, sweeteners or gluten.
In the kitchen lor is a workhorse. Mix it with chopped parsley or dill and fill börek, gözleme, poğaça or spinach pies; stir it into a savoury çörek dough; or spoon it over warm toast. At breakfast it is often eaten simply, with a drizzle of honey or a spoonful of jam, a combination Muratbey itself suggests for children. It also works crumbled over a rocket salad, folded into pasta with herbs, or used in a cheesecake-style dessert where a light, fresh cheese is needed.
Keep the bag refrigerated at +2 to +4 °C in its original packaging and use it soon after opening, as the producer advises for all its opened cheeses. Because lor is a fresh product, only open what you plan to use within a short time.
