Yufka is the thin, flexible pastry sheet at the heart of Turkish home baking. This Maun pack holds six sheets of 125 g each (750 g in total), and the manufacturer's ingredient list is very short: wheat flour (with the flour treatment agents ascorbic acid and alpha-amylase), water and salt. The pack carries a no-preservatives note, a halal mark and a Made in Turkey badge, and the sheets are sold frozen.
Layer the sheets with a filling of white cheese and parsley, spinach, minced meat or potato and bake them as a tray börek, roll them into cigar-shaped sigara böreği, fold them around a filling for gözleme on a hot pan, or use them as a quick wrap. Brush the sheets with a little melted butter, oil or an egg and yoghurt mixture before baking for a crisp, golden top, and keep unused sheets covered so they do not dry out.
The sheets contain wheat gluten. Keep the pack frozen at -18 °C until you are ready to use it, and follow the thawing directions on the pack.
